We all know we live in the north, right? And that to eat local in the winter means limited veggies,
right? And we’re thinking that a plant-based diet is a good thing to do for our bodies and the
planet, right? And we’re also aware of the benefits of a healthy micro biome right? And we’d
rather not have to preserve our veggies by cooking the life out of them, or running a freezer all
winter, right?

SOOO, let’s ferment some food!

Jason Hayes from Burdock Grove Farm would like to host you in their commercial kitchen to
focus on fermentation. We’ll make a couple of recipes, sauerkraut and kimchi, and perhaps a
bonus batch of something spontaneous. Participants will take home a beautiful baby edible pet,
as we’ll split the resulting bounty among us. around five quart jars of fermenting foods.

About Jason

Jason farms at Burdock Grove Farm with his wife Marcelina Salazar, where they raise chicken, pork and vegetables. These have been on the EL store since it opened, and are now joined by a few prepared foods from their new commercial kitchen. He’s been a board member for the past three years. Eat Local is one of the ways he’s exercising his education in, and passion for, local food systems.
